How to make 2 Decadent Christmas Chocolate gifts

Here are two delightfully delicious decadent Christmas chocolate recipes, superbly simple ~ Coconut Cups and Almond Pieces. These mouth-watering treats make a great stocking stuffer and / or a thoughtful last-minute gift idea and, of course, you will want to make a batch for your  friends and family. A sweet specialty ~ and always a big hit!

Chocolate Coconut Cups Recipe

Ingredients

This recipe fills about 36 to 40 small cups

  • 16 oz 100% semi-sweet chocolate (bulk pieces)
  • Two cups Shredded coconut (unsweetened)
  • 40 to 50 Small Christmas decorated candy paper baking cups

Directions

  • Roast coconut first in the oven, until light brown (about 10 to 15 minutes at 325 degrees)
  • Melt chocolate in a medium-sized pot on top of stove – stirring constantly
  • When chocolate completely melted, stir in coconut until blended
  • Spoon into small baking cups about 2/3 full
  • Sprinkle a little coconut on the top (un-roasted is fine)
  • Let cool

Almond & Cranberry Pieces

Ingredients

  • 2 ½ cups Dark Chocolate (white chocolate can be substituted)
  • 2 cups Roasted Almond slices
  • 2 cups Organic Dried Cranberries

Directions 

  • Roast almonds in oven until light brown (on cookie tray for approximatly 10 – 15 minutes at 325 degrees)
  • Melt chocolate in a medium-sized pot on top of stove – stirring constantly
  • Stir in almonds and cranberries until blended
  • Spread thinly into a waxed lined cookie sheet and refrigerate until firm
  • Break into small bite size pieces

Notes

  • “Coconut Cups” recipe can use either sweetened or unsweetened shredded coconut. Prefer unsweetened
  • If making a batch as gifts and need to pack  – freeze the coconut cups which takes about 15 minutes
  • “Almond Pieces” chocolate should be thinly spread in cookie sheets otherwise the resulting dessert is chunky (our choice).  Spreading the mixture this way makes the recipe go a lot further!
  • Moderation recommended for those watching their sugar intake
  • Being neither a “cook” nor a “sweets” person these recipes are perfect to make as a once a year treat during the holiday season
