Super Simple Oven Baked Frittata

Thanks to our daughter I am switching to Frittata as my quick and easy dinner choice. It is so simple your kids can make it – maybe with a little help from mum or dad!  For dinner it was convenient as all the items were on hand except I picked some kale from the garden instead of using spinach. Don’t know why I haven’t tried this dish before as it really tastes great.

Frittata Ingredients:

  •  1 Tablespoon Olive Oil
  • 1/2 cup milk 2%
  • 4 to 6 eggs depending on size
  • Parmesan Cheese
  • 1/2 cup Spinach (or kale) chopped
  • 2 x Potato (peeled) chopped
  • 2 x Carrot chopped
  • 1 x Red Pepper sliced
  • 1 x onion diced

Directions

  1. After chopping the vegetables, except kale or spinach, place on oiled oven tray and bake for 20 minutes at 350 degrees F
  2. Remove vegetables from oven and when cool mix together, adding in chopped kale / spinach
  3. In a separate bowl mix the eggs, milk and add 1 – 2 tablespoons of Parmesan cheese
  4. Place vegetables in 8 x 8″ casserole dish and pour egg mixture over them
  5. Sprinkle more cheese on top if you wish
  6. Bake at 350 degrees F for 30 minutes or until cooked. Frittata should be firm when cooked
  7. Serve with a salad and toasted garlic sourdough bread for a tasty meal

Options:

  • Substitutions and options galore such as adding sliced zucchini, kernel corn, sliced grape tomatoes, sliced mushrooms, green onions or chives
  • For non-vegetarian options, add chopped cooked bacon or sliced sausage pieces
  • My choice next time will be to add cooked shrimp to the vegetables
  • This recipe baked in an 8″ square casserole dish is a good size meal for 4 adults
  • For more people, increase or double ingredients and use a larger casserole. Baking time will be longer

Notes:

  • An easy meal for breakfast, lunch or dinner and reheated leftovers are just as tasty
  • We buy and use ungraded eggs from organically fed chicken
  • Before baking, a finely chopped large clove of garlic was sprinkled on the top. Personal choice
  • All vegetables used are organic or chemical free

This frittata is a healthy meal option which your family will enjoy often.  Also a dinner suggestion, especially at the last moment as no hassle.
