Coconut Flour Pancakes ~ A Must Try Recipe

Pancakes are everyone’s favourite! This recipe using Coconut flour has to be tried to be believed how good it is! It is great for brekkie or brunch with eggs & sausages or even an afternoon snack with goat cheese & kiwi. If you follow a diabetic, gluten-free or Low Carb diet this recipe is for you and it scores low on the glycemic index. It only has 8 ingredients & fits my simply super easy to make criteria:

Ingredients for Pancakes:

  1. 4 eggs
  2. 3 Tablespoon Olive oil
  3. 1/4 cup Milk (I use Almond Milk – unsweetened with no additives)
  4. 1/4 cup Coconut flour
  5. 1 level Tablespoon of Stevia
  6. 1/4 Teaspoon Sea Salt
  7. 1/2 level Teaspoon Baking Powder
  8. Optional: Add 1 tablespoon of flax (grind first) to the dry ingredients

Directions:

  • Blend eggs, oil and milk until well mixed
  • In another bowl sift flour, stevia, salt & baking powder
  • Add dry to wet ingredients and thoroughly mix
  • I use 2 tablespoons of mixture for each pancake
  • Add to preheated fry pan with a little oil at medium heat
  • As with traditional pancakes, when bubbles form on the top of the batter, flip over & cook other side (Total cooking time varies 3 – 6 minutes)

I have made pancakes with and without ground flax seeds – both a hit! Really is a wholesome way to cook nutritious food for you and your family. Another healthy nutritious meal for any time of day ~ and a quick and easy “Good to-go” recipe. Time to start a new family tradition for Sunday brunch?

  • Recipe makes 8 to 10 pancakes
  • This recipe is my variation of a Bob’s Red Mill recipe available online
  • I also cook and bake with almond flour, almond meal and flax flour
  • Here’s the nutrition facts about coconut flour :
  • Nutrition Facts for 2 Tbsp Coconut Flour
    – Cal 60 – Fat 2 gram – Carbohydrate 8 grams – Fiber 5 grams – Sugar 1 grams  –  Protein 2 grams. Plus coconut flour contains iron and no additives, sulphites, etc
