Quick & Easy Turkey Chilli

Turkey chilli can be quick and easy as well as healthy. We all have our favourite recipes for chilli and this is one of ours. We make this often as its a great last minute meal, good for large gatherings and super as a leftover:

Quick Corn Chilli – tastes great !

Ingredients – Chilli for 4

  • 1 – 2 Tablespoons Olive Oil
  • 1 lb mince Turkey (or beef, chicken, elk, etc)
  • 1 or 2 large onions – chopped
  • 1 Red pepper – chopped
  • 6 Mushrooms – sliced
  • 6 cloves garlic – minced
  • 3 cups Stewed Tomatoes
  • 1 cup frozen corn kernels 
  • 1/2 can (3 TBS) Tomato paste (to taste) 
  • Can (19 oz) Kidney beans (or 2 cups if you make your own)
  • 1 – 2 tablespoons Chilli spice
  • One half Teaspoon each of : Cumin, oregano, paprika, pepper & salt (change to suit your taste).  I like to add a pinch of dry oregano

Quick Directions:

  1. In a large pot, heat the oil, and fry chopped onions, mushrooms, red pepper and garlic. Continue to stir fry for 5 minutes. I like to add spices for the last 2 minutes stirring constantly
  2. Add mince and cook for 15 minutes over medium heat to brown
  3. Then add remainder of ingredients: tomatoes (drained), corn, tomato paste, chilli beans & mix well
  4. Simmer for half an hour, stirring occasionally
  • Serve with sour cream, grated parmesan cheese and side salad – see recipes for 3 easy salads
  • To make this recipe into a Vegetarian Chilli simply substitute 2 cups diced carrots, a cup of cauliflower florets another cup of corn and  other vegetables of your choice

Notes:

  • I often make a double batch to freeze for later
  • I go light on the chilli powder and place additional chilli shaker on table along with hot sauce when serving
  • I use my own home canned tomatoes which have very little juice and drain liquid before adding to chilli
  • In summer we buy non GMO local corn and parboil & freeze corn kernels in 1 cup quantities to add to chillis and soups
  • If you purchase stewed tomatoes or tomato paste check the nutrition labels as often they contain high amounts of sugar

This is oh so easy … 

Chilli Wraps from Leftovers Ingredients:

  1. Cooked chilli (turkey or vegetarian)
  2. Soft Tortilla Wraps (people x # per person)
  3. Refried beans
  4. Sliced lettuce, chopped cucumber, etc
  5. Shredded cheese
  6. Finally, top with Sour cream & Salsa and serve
Great fun. An easy meal with lots of protein. Kids love to build their own … enjoy!
