How to Can Non-GMO Corn

Home canning of corn is one of the most simple ways to preserve fresh picked corn. Non-GMO Corn has been on our “buy local” menu for a decade especially Jubilee triple sweet Non-GMO corn on the cob. Last summer several types of Non-GMO corn were canned for the first time in years.  A very easy process if you have a high pressure canner.  As this is a vegetable we use frequently it was decided to put aside some jars for soups & chili :

When we first moved to the Fraser Valley a decade ago we discovered Triple Jubilee Non GMO corn and have been “hooked” ever since. If you are driving through the area in mid to late Summer you will notice little green painted shacks at convenient locations along the highway with Sparkes on them where you can buy the corn. A big plus for the corn besides being Non-GMO is that being local, it is picked the day before, or same day. If preserving your local produce this is #1 every time for maximum taste and freshness.

Directions for Canning Corn:

This is for “raw pack” whole Kernel corn and is so simple :

  • Husk the corn cobs, remove silk & wash & dry (*See below)
  • Cut corn from the cob to remove the kernel but do not scrape cob
  • Pack loosely in clean, hot canning jars
  • Add hot water to fill jars to the top allowing 1″ headspace for kernels & water
  • Clean glass jar tops, add sealing lids and screw tops to close
  • Process in canner as per your instructions. For example Presto instructions are 10 pounds pressure for Pints for 55 minutes
  • * Recipe suggests boiling cobs (ie blanching) for 3 minutes before removing kernels
  • Note: One medium sized cob equals approximately 1 cup of kernels

Uses of Canned Kernel Corn

There are many ways to include corn in your diet including recipes such as:

  • Chicken or vegetable soups
  • Corn is a great veggie to use in omelettes, quiches or fritattas after draining liquid
  • I like to add corn to meat or vegetarian chili Plus leftover chili is great used in a wrap the next day
  • Corn Relish is always great with sausages, hamburgers, salads, wraps and try it with meats like chicken or fish
  • Canned Kernel Corn is an excellent addition to any salad, such as chicken or egg salads & even a bean salad. Three Super Simple Salads
  • … and finally, the corn is great just as it is out of the jar and heated

Due to limited home garden space I have not tried to grow my own corn; plus with the availability of high quality Non-GMO local fresh corn during the harvest season – there is no need.

Note : Family results from the “taste test” with home canned corn versus
a can of store bought tinned corn: the difference may just amaze you – the home canned corn, even 6 months after canning, is absolutely superior with a tasty, sweet fresh flavour and its Non-GMO! The store bought corn quite literally was “tasteless”. It was not a contest!
