Quick Quiche Always a ‘Dinner Winner’ #1

It is so true that Quiche is quick and easy to prepare and can be popped in the oven to cook while you make a salad or other side dish and not feel rushed. Another benefit of the nutritious quiche is the almost endless varieties from simple traditional Quiche Lorraine, made with the eggs, plus bacon with a tomato topping if you like or a Greek Quiche made with black olives, spinach & Feta cheese. Have fun and remember to bake two at a time to freeze one for later in the month, or for company. Always enjoyable.

A quick and easy “last minute” dinner was delicious. Made from ingredients on hand.

A Simple Vegetable Quiche

Ingredients:

  • 4 or 5 Eggs (depending on size)
  • 1 cup creamo / milk
  • Salt & Pepper to taste
  • Olive Oil
  • Onion 1/2 cup sliced
  • Mushrooms 1/2 cup sliced
  • Green pepper 1/2 cup chopped
  • 2 cups Extra Old Cheddar Cheese (grated)
  • Few Teaspoons of Dried basil or oregano
  • Optional Add-ons: Add 1/2 cup of chopped zucchini and / or corn kernels. Sliced tomatoes are great on top, with a light sprinkling of Parmesan grated cheese
  • Note that a traditional quiche is usually made with a pastry base. Instead of pastry, besides no base at all, you can use thinly sliced potato or perhaps strips of bacon as a base (or both!).
  • I also cut out a circular piece of parchment paper to cover dish base first, along with a little olive oil
  • Quick Tip: microwave the chopped onion, garlic (if you add), pepper, etc as this reduces moisture in the quiche plus saves time and fry pan clean up!
A Super supper with your choice of sides

Baking Directions:

  1. Preheat oven to 350 degrees F
  2. Heat oil in cast iron pan and stir fry the peppers, onions, mushrooms about 5 minutes & remove from heat (or use Quick Tip microwave above)
  3. Place base of potatoes and / or bacon slices into a 9 inch quiche dish
  4. Next sprinkle 1/2 cup shredded cheese evenly
  5. Add and spread the stir fried veggies into the dish
  6. Mix eggs with liquid (creamo) and salt and pepper (if adding)
  7. Then pour on the egg / mixture
  8. Finally another layer of shredded cheese, a sprinkling of Parmesan and the dried oregano
  9. Bake in lower shelf in oven for approximately 45 minutes (and the middle of quiche is firm)
  10. Allow to cool a 3 to 5 minute before serving

Variations on a Quiche Theme:

There are so many variations on the type of quiche ; such as the asparagus with other favourites like broccoli or Greek style (coming soon!). We love them all. Other additions can be salmon or tuna (canned), left over roast chicken (or other meat) cut into small chunks. Incorporate your family food “likes” into your quiches for a big hit every time. Freeze cooked quiches for up to a month and they are always perfect for leftovers the next day. Enjoy your home made, healthy meals ~ Liz
