Tasty Chicken Cacciatore ~ Easy to make at Home

Chicken Cacciatore has been a top favourite over the years. This is one of those basic recipes you will make over and over again. Healthy and a time saver and great to cook ahead for company for a casual relaxed meal. Another reason to make this delicious meal is that there are under 10 items, most of which you may have on hand.

Precook the chicken

Chicken Cacciatore

Ingredients for 4

  1. 2 tablespoons Olive Oil
  2. 4 medium sized chicken breasts
  3. Sufficient coconut flour to drench the chicken
  4. 2 onions – sliced in whole rings
  5. 4 cloves garlic chopped
  6. 1 cup sliced mushrooms  and / or a sliced Green Pepper 
  7. Half a cup of dry red wine (optional)
  8. 16 ounces (approximately) stewed tomatoes
  9. Salt and pepper to taste. I also like fresh Rosemary from the garden
  10. Use 1/4 cup Tomato Paste to thicken if too watery
Mushrooms, onions, peppers, garlic almost ready

Directions:

  • Cover the chicken in flour (use a large plate with small amount of flour)
  • Heat oil in pan – Medium heat. Add chicken and cook each side until brown (only takes 4 to 5 minutes per side)
  • Remove chicken from pan
  • Add sliced onions and garlic and saute until soft
  • Then add the mushrooms and green pepper and saute until soft
  • Add wine to the vegetables and cook until the wine evaporates
  • Add tomatoes – reduce the heat, cover the pan and simmer
  • Cooking time : 20 to 30 minutes (depending on size of meat portions) until cooked

While the cacciatore is cooking you have lots of time to make a salad or steam another vegetable like corn or asparagus. That’s it!

Fresh cukes & tomatoes for fresh Greek Salad – just add Feta cheese

Notes:

  • Use 8 thighs if you prefer dark chicken meat. For economy, select drumsticks
  • Use Extra Virgin olive oil
  • Whenever I cook minestrone, sauce, chilli or stew using home canned fresh organic tomatoes or sauce, it really adds a unique taste to a simple recipe.
  • Made from ingredients usually on hand or in the freezer
  • Makes a great “left over” meal – if there is any!
  • I usually accompany chicken cacciatore with fresh local corn (GMO free) on the cob and a salad but it goes great with just about anything.
