    Hamburger & Bacon Soup ... Hmmm So Tasty

    Hamburger soup with a little added bacon makes it special and tasty. Here is a recipe which uses reasonably priced, quick and easy to cook mince whether it be chicken, turkey, elk or beef. There are many other recipes online and the trick is to find one that you and your family enjoy. It is easy to add, delete or switch ingredients and make nutritious healthy meals for your family at a reasonable cost.  This, I believe, was based on a Best of Bridge cook book and has always been a family favourite with a few changes over the years :

    Hamburger & Bacon Soup
    Hamburger & Bacon Soup - The Beginnings

    Hamburger & Bacon Soup Ingredients (For 4 - 6 adults)

    • 2 - 4 tablespoons Olive Oil
    • 1 lb Mince meat (turkey, chicken, beef, game meat, etc)
    • ¼ to ½ pound chopped bacon pieces
    • Liquid: 4 cups broth - 32 oz Vegetarian, chicken
    • 3 - 4 cups of Canned tomatoes (2 canning jars) or 28 oz
    • 1 medium onion - sliced
    • 2 - 4 cloves Garlic - chopped
    •  3- 4 (or more) medium carrots sliced
    • 1 cup corn, beans, or veggie of your choice
    • Spices to Add
      • 1 teaspoon Cumin
      • ½ teaspoon Turmeric
      • 2 Bay leaves
      • 1 Teaspoon Salt
    • Fresh chopped parsley, chives & herbs (from the garden)
    • Fresh chopped celery if available

    Directions:

    • Heat oil in large pot on top of stove
    • Stir fry bacon, onion & garlic on medium heat for 3 - 5 minutes
    • Stir in spices and mix well
    • Add mince meat and cook for 10 - 15 minutes, stirring occasionally
    • Add broth & tomatoes & bring to boil and simmer additional 15 - 20 minutes ... that's it!

    When Serving:

    Add a spoon of sour cream or yoghurt and additional sauces if desired

    We use our own veggies in soups if we can especially garlic & parsley

    Hamburger & Bacon Soup Notes:

    • The mince should not have preservatives, hormones, steroids or other additives such as colouring. Grass fed is first choice
    • Broth: Buy bulk organic vegetable broth (32 oz)  if there is no fresh available... or make your own
    • Use fresh or frozen drippings from roast dinners as part of the liquid.  Freeze this in 2 cup quantities to use later
    • Also use vegetable "water" from cooking any fresh vegetables such as carrots, yams, cabbage, broccoli and add this to half the roast liquid or purchased vegetable broth, if needed
    • Depending on how "chunky" you like the soup,  simply add more chopped vegetables when cooking

    In Closing ...

    This soup is so nourishing on a  cold winters day and is so easy you will make it often.  Invite friends over and make a double pot for seconds.  Hope this works for you. Have fun and enjoy this nourishing, healthy soup which is a meal by itself. Enjoy! ~ Liz
