    How to Make a Simple Healthy Omelette

    An egg omelette is a very healthy, quick and easy breakfast and is also great for brunch, lunch or dinner! This basic omelette does not take long, although made from scratch. Simply increase ingredient quantities for the family for a nutritious start to the day.

    Omelette Ingredients (for 2 - 4 people)

    • 4 - 6 eggs
    • ¼ to half Teaspoon Turmeric powder
    • ¼ to half Teaspoon Oregano dry spice
    • 2 Tablespoons Parmesan cheese
    • 1 - 2 Tablespoons Olive oil (or butter)
    • 1 - 2 onions - chopped
    • 4 - 6 Crimini mushrooms - sliced
    • 1 - 2 Garlic cloves  - minced
    Saute onions, mushrooms, spices in oil

    Directions:

    1. Whisk eggs adding cheese, such as parmesan. Set aside
    2. Heat Olive Oil in frying pan
    3. Saute onions, mushrooms, garlic until soft (approximately 3 to 4 minutes)
    4. *Add egg mixture. Lift edges as eggs cook to allow uncooked mixture to run underneath
    5. Let cook on medium heat 2 to 3 minutes
    6. I like to turn the egg mixture over once and cook another 2 to 3 minutes

    *Note: A quicker breakfast idea: For scrambled eggs, which is usually faster to cook by simply continuing to stir eggs once in the pan until cooked (4 - 5 minutes)

    Serve with: sliced raw tomato or fresh salsa, half a sliced avocado, chopped greens, fresh herbs such as parsley or cilantro. Or Serve with favourite fruits such as sliced mango, avocado, apples, pears.

    This super simple recipe is also super healthy, tasty and nutritious and will give you lots of energy for a busy day. That's it for my quick and easy "Good to-go" recipe today.

    Nutrition Note:

    This omelette has lots of protein plus Vitamin A, Vitamin C, Vitamin D, Vitamin B-12, Vitamin B-6, calcium, iron & magnesium and more. Onions are considered an antioxidant.
