Eggs are often a first choice for a meal or snack and we look forward to our weekly fried egg brekkie as well as frequent hard boiled egg snacks (so simple!). Super Simple Oven Baked Frittata
This recipe has been on CAP since 2017. It is nutritious and delicious. Click on the link in the heading for the recipe. A few additional notes:
~ As mentioned, fresh kale from the garden can be used in place of spinach (or vice versa). Broccoli is also another favourite green vegetable to add
~ Leftover Chicken Frittata An easy variation is to add half a cup of (cooked and diced) chicken, or other poultry
~ Another idea is to add half a cup of seafood such as shrimp or salmon (canned) for an excellent Seafood Frittata. This one is super nutritious and tasty
~ Serve the cooked frittata with "Salads Galore" - always a great healthy addition to any meal
